*Haven't been holy since the beginning of t8 content. Since most priest healers are holy and the fact that I think every raid should have one disc priest and disc is much better imo in heroics, I chose disc as my healing offspec.

Tell us about the role of your class in raiding and how your spec helps you accomplish this. Include in this discussion the consumables that you would normally farm and have for every raid. Each priest spec has their own little niche in a raid, that said, all priests have hymns that can save the raid from wiping by restoring mana or by adding a little bit more healing.
The consumble for all three specs is flask of frostwyrm (+125 sp)
Shadow: Unfortunately, shadow priest dps isn't as competitive as I think it should be. All things equal they are probably at the lower end of the damage meters. Basically my job is to provide replenishment, do a little bit of healing and give casters a 3% increase in spell hit. That said shadow priest are one of the more resilient dps characters with the shields, damage reduction and self healing, healers will normally have one less damage dealer to heal when a shadow priest is in the raid.
My main difference in gear for shadow is a trinket change from the illustration of the dragon soul (+200 sp stacking - when I am unable to focus on a single target) to the nevermelting icecrystal (+111 sp/clicky crit chance - popping the trinket right before the first sw: p allows the extra crit to be carried through the entire fight as long as sw: p is never casted again aka a fight where the focus is one boss)
Discipline: A more quirky healing spec that focuses more on preventative damage rather than reactive healing. It's more towards a tank healer though it can be a fine raid healer if needed. Basically the disc priest's job is to throw up shields and heal. The shields give the raid some virtual hp so they can survive when the hits become bigger than their health pool. The shields obviously go onto the tanks but mages with the incanters talent and the raid when a boss aoe comes up are where shields also shine.
Again a trinket change between the eye of the broodmother (87 crit +125 sp stacking) and the tears of the vanquished (84int proc +500 mana) depending on if i need mana or not.
Holy: Holy priests are raid healers, healing tanks is just a waste of a holy priest. With pom, coh, and poh all providing multiple heals they obviously are raid healers. Basically holy priests excell at healing multiple players at once, during aoe that damages the entire raid, they can quickly heal the dps in very few gcds.
Since blizz only allows two specs, my holy spec will look like

I don't really care what spec I'm in, I personally like being flexible. That said I hate how shadow priest's dps has very little burst and the cd on penance is just a tad bit too long for my taste.

We typically do not raid Fri/Sat though we do attempt to for progress raids, but the majority of our raid efforts fall on the weeknights.

Umm I know my class very well, and try to learn and understand the nuances of the different specs and skills. Although perfection can not be achieved, I try my best to play perfectly, especially for dps as juggling the various dots perfectly is needed for dps.
